Creamy Chicken Taquitos

1 lb. frozen chicken breast
1 juiced lime
2 cloves garlic, pressed
1/2 t chili powder
1/4 t cumin
1/2 kosher salt
1/4 black pepper

Put 1/4 C water and above ingredients in crock pot on high for 5 hours.  Shred and let cool.

Next, mix shredded chicken with:
3 oz cream cheese, softened
1/4 C green salsa
1 T fresh lime juice
1/4 t cumin
1/2 t chili powder
1/4 t garlic powder
3T chopped chopped cilantro
2 T onions
1 C grated pepperjack cheese


Set above mixture aside.  Now you will need:
small corn tortillas
cooking spray

Heat tortillas in microwave until soft enough to roll w/out cracking.  (place them between damp paper towels for 20-30 seconds)

Heat oven to 400.  Line a  baking sheet w/ foil and lightly spray w/ cooking spray.  Place chicken mixture down center of tortilla and roll up, placing seam down on baking sheet.

Bake for 15 minutes!
